Shape Up Saturday Series: Cookies for Santa-Chocolate Chip Cookie Recipe 21DF Approved

Ok, so we all know that Santa is coming tonight to drop off
some of our lovely presents right?  Want
to leave some cookies out for him and some milk?  Well, since it’s Shape Up Saturday we all
know that I have to do something health and fitness related so I decided to
share this chocolate chip recipe from the cookbook Fixate.  It’s a 21 day fix approved recipe and is 1.5
yellow containers worth.  This is in case
Santa wants to try the 21df and slim down a little bit after the holiday
season!
Ingredients
  • 3 cups whole wheat flour
  • 1 tsp baking soda, gluten free
  • ¼ tsp sea salt/Himalayan salt
  • ¼ cup extra virgin coconut oil
  • ¼ cup pure maple syrup
  • 1 large egg
  • 2 large egg whites
  • 1 tsp pure vanilla extract
  • ½ cup semi sweet or dark chocolate chips

Directions
  1. Prehead oven to 350 degrees
  2. Line two baking sheets with parchment paper.  Set aside.
  3. Combine flour, baking soda, and salt in medium bowl.  Set aside.
  4. Beat oil and maple syrup in a large mixer bowl until creamy,
    approx 4-5 minutes.
  5. Add egg, egg whites, and extract; beat for an additional 2
    minutes.
  6. Add flour mixture to egg mixture; mix until blended.
  7. Add chocolate chips; mix until blended.
  8. Drob by rounded tbsp onto baking sheet.  Bake for 14-16 minutes or until golden brown.
  9. Store in airtight container.
