Shape Up Saturday Series: 21 Day Fix Approved Fudge Brownie Recipe

A lot of people always say, I don’t know how you do this
whole clean eating/diet thing.  I wouldn’t
be able to eat healthy all the time especially because I have a sweet
tooth.  Well, guess what y’all, I have a
sweet tooth like you do not believe.  My
mom says I get it from my dad, we could literally sit there and eat sweets all
day long and be total content with ourselves. 
Well that’s if we didn’t gain weight from it and it wasn’t so unhealthy
for the both of us. 
Since starting the 21 day fix I’ve had to find different
healthy alternatives to my food.  When I
lived at home I ate predominantly healthy. 
My mom and I loved things like tofu, avocado and we were even ok with
eating sweets made out of avocados. 
Believe it or not, avocados are perfect for substitutions of unhealthy
ingredients, which brings me to this recipe. 
Believe it or not this recipe is made with avocado.  You mash it up so you can’t even tell when
eating the brownies, but that’s amazing isn’t it?
These brownies are not only 21df approved, but they are also
Dad approved!  My dad LOVES these brownies
and he has no idea that they are made out of avocados so shh don’t tell him
hehe.  Anyway, this recipe I found on the
Team Beach Body website.  They have so
many awesome recipes for anyone who has a sweet tooth.  This is why when people say you’re on a diet
I always laugh because yes I need to eat healthy, but who else can say that
they eat brownies on their diet?
Ingredients:
  • 16 servings (1 brownie each)
  • 1 medium ripe avocado, mashed
  • ¼ cup extra virgin coconut oil, melted
  • 1 large egg, lightly beaten
  • ½ cup pure maple syrup
  • 1 tsp. pure vanilla extract
  • ¾ cup unsweetened cocoa powder
  • ½ tsp. seal salt
  • ¼ gluten free flour
  • 1/3 cup dark chocolate chips

Directions:
  1. Preheat oven to 350 degrees F.
  2. Line an 8×8 inch baking pan with aluminum foil.  Lightly coat with spray.  Set aside.
  3. Combine avocado, oil, egg, maple syrup, and extract in a
    medium bowl; mix well.  Set aside
  4. Combine cocoa powder, salt and flour in a medium bowl; mix
    well.
  5. Add cocoa powder mixture to avocado mixture; mix well.
  6. Add chocolate chips; mix until blended.
  7. Pour batter into prepared pan; spread to make even.
  8. Bake for 33-36 minutes, or until toothpick inserted in
    center comes out clean.
  9. Cool for an hour before removing from pan.  Cut into 16 squares.

For my 21 Day Fixers this is 1 Yellow Container and 1 tsp.
