Ok, I have a slight confession to make. I absolutely hate zucchini. I actually hate vegetables all together, but unlike my younger self, I force myself to eat them nowadays. Yes, if you follow me on instagram you might ask, how in the heck do you hate veggies if you eat them all the time? It’s called being creative haha. I’ve been attempting to like Kale and Zucchini but for whatever reason, I just can’t get into it. These zucchini pizza bites were good, but I still don’t like zucchini haha! There are so many recipes out there for Zucchini bites and a lot of them look better than mine, but I had to make mine 21 day fix approved. I honestly don’t know what the container count is, but I just kind of winged it. I think I counted 11 bites as 1.5 green 1/2 blue and 1 tsp. If this is the actual count I’m really not sure, but use your best judgement. I also did not put as much cheese on mine because I wanted to keep it a little on the healthier side since I’ve been trying to take a step back on the dairy.
Personally, I probably wouldn’t eat these again because I don’t like zucchini and have tried every healthy recipe I could to grow to like them, but other than that they were pretty good, even with the small amount of cheese on them.
Ingredients:
- 2-3 Zucchinis (depends on how many bites you would like)
- All Natural Marina Sauce, no sugar added
- Shredded Mozzarella Cheese
- Jalapenos
Directions:
- Preheat Oven to 350F.
- Cut your zucchinis into 1/2 inch (maybe even smaller) slices.
- Put a small dollop of marina sauce on the zucchini.
- Sprinkle with cheese.
- Top with jalapeno.
- Bake for 15 minutes, or until cheese has melted.
