If you have been following along on this move to Florida, you already saw part 1 of the food I’ve cooked here in Florida. Click here in order to see the first part. There are more recipes in part 1 only because when I was working (more on that tomorrow) I just couldn’t keep up with trying new recipes every day. I’ll probably be working on more recipes now that I have a little more free time.
The recipe calls out for chocolate chips, however I didn’t want to add the extra calories to it since I was already eating like a pig. I left the chocolate chips out and just did the oatmeal and banana. I personally thought they tasted delicious. These are more of a healthy snack/breakfast, so if you’re looking for this to be a really sweet muffin, it’s not.
Ok, so the recipe says this is a calzone, but it’s definitely not. This is a stromboli, it’s just braided up top instead of just how I did it in part 1 of this food series. I will say though, it was good!
Carbonara with Pan Seared Scallops
This was so good. I love scallops and they were on sale so I had to buy them. Granted it would probably be better with bigger scallops, but I’m on a severely tight budget right now, so baby scallops it is!
Chicken Caprese
I’m really sorry, but I cannot find the recipe I used for the life of me! If I find it, I’ll edit this post, but as of right now I can’t find which recipe I used. I thought this was really delicious. My fiance on the other hand, hated it but he doesn’t like when tomato slices are heated up. He likes tomato sauce but says it’s completely different. I know, he makes no sense.
Homemade Chicken Noodle Soup
I didn’t follow a regular recipe for this soup. It was a family recipe. Basically just put a bunch of stuff in a pot and let it cook all day long. My fiance got really sick around Easter time and I tried nursing him back to health.
I loved this recipe. It was a huge hit in our household. Super quick and easy!
Honey Chicken
I’m really sorry, but again, I can’t find this recipe anywhere. The recipe was delicious. However, I did notice that the other chicken breast that was slightly thicker wasn’t cooked all the way unfortunately.
My plate has quinoa on it because there was a quick hot second where I wanted to try and eat healthier. That very quickly ended. This recipe was really good, and it lasted us a few days. I didn’t quite calculate correctly on the serving sizes.
Monkey Bread
This was a super easy recipe. All I did was I took the Pillsbury biscuits (the 8 count in a can), took each biscuit and cut it into four pieces. Then I dipped it in butter, cinnamon and sugar. Baked it at 350, and I believe I kept them in for about 15-20 minutes. I’d just double check because I can’t remember 100% how long I kept them in for.
By far, the easiest recipe I’ve ever made. It was just ravioli, cheese, and sauce. It’s also great for kids, or if you have a few kids coming over to hang out. It’s delicious, and everyone will love this.
My fiance liked this recipe more than I did. I wasn’t a huge fan, but it was still pretty tasty. This will only be made again, just because I can stand it and my fiance loves it.
This was terrible. Both my fiance and I hated it. I wanted to like it because it looked so good in the picture, and the recipe sounded so delicious, but we didn’t like it. Some people might actually like it though because we are also somewhat picky.
I used the wrong cut of beef for this recipe, so it was a little chewier than it should’ve been. The original recipe had mashed cauliflower, but my fiance would never eat that. Which is why I did mashed potatoes instead. The gravy in this recipe was so delicious. If it wasn’t for me using the wrong cut of beef, it would have been amazing!
My fiance loved this recipe. I personally hated it and ended up not even eating my portion. Scrambled eggs ended up being my dinner.
21 Day Fix Approved Turkey Burger
I used to eat these all the time when I was doing the 21 Day Fix. I started eating this while I was at my last job and I ate it for a few weeks for lunch. However, when you eat the same thing long enough, you can get sick of it. That’s when I switched to making wraps.
Let me know if you make any of these recipes. I would love to see what y’all think!
xoxo Monica
